What the world needs now, is love sweet love!

The February blah’s are real. Between lack of sun, cold weather and no long breaks, our bodies, minds and spirits could use a little pick-me-up. So I encourage you to do something for yourself this month. Do something for someone you love this month and do something for your community this month. I find when I can invest something into myself, I have the energy to transfer that self love into my relationships and my greater community. It's a beautiful thing.

February is a short month, but don't worry. Soon the blooming of spring will happen, and in no time we will be shedding our outer layers and spending more time in nature. When life starts to feel a little heavy, and you can not find solace doing physical movements, seek the professional help of someone who can help you through whatever difficulties you may be facing. Our merntal health during this cold month can be tested as well.

It is important to make sure you are not only physically healthy, but mentally healthy as well. So this month take the time to connect with your body, connect with others around you and spend some time in nature even though it may be colder than you like. February blah’s will turn into February ah-ha’s in no time.

Gluten-free black-bean double-fudge brownies

Gluten-free expert Kathy Smart gives us a sweet and healthful way to indulge our sweet tooth -- surprisingly decadent black bean brownies.


By Kathy Smart

1 can
black beans (rinsed)
3
eggs
1/2 cup
unsweetened cocoa
1/2 cup
butter or coconut oil
3/4 cup
Sucanat or coconut sugar
1/2 cup
dark chocolate chips
1 tbsp
vanilla extract
1/2 tsp
baking soda
2/3 cup walnuts

Directions

  1. Preheat oven to 350F
  2. Add all ingredients except walnuts to a food processor and puree to create your batter
  3. Stir in walnuts
  4. Add brownie batter to a pre-greased 8 by 8 inch pan
  5. Bake for 30 minutes or until toothpick comes out clean
  6. Serve with melted dark chocolate, fresh mango and coconut milk ice cream.

Makes 12 generous brownies
