Lime and Coconut Poached Fish
A recipe chosen by Judith Kaufman
|
INGREDIENTS |
1 |
cup coconut milk (can use lite) |
1 |
long green chili, finely chopped (can use jalapeno) |
1/4 |
cup lime juice |
6 |
kaffir lime leaves, finely shredded (or lime rind if you can't find these) |
1 |
T fish sauce |
200 |
gm firm white fish fillets (cod, haddock, halibut...) |
1/2 |
cup cilantro leaves |

DIRECTIONS |
Place coconut milk, chili, juice, leaves and fish sauce in a frying pan over medium-low heat.
Bring to a boil, reduce and simmer for 4 minutes.
Add fish and cook 3-4 min each side or until tender.
Add cilantro and serve.
Can be used for chicken as well. |
